Fricks Spettkaksbageri

Our summer weekends are mostly spent driving around Skåne and choosing a new place to visit — a castle we haven’t been to, a forest we’ve yet to explore, or a kaffestugga we didn’t get a chance to visit last summer. This past weekend we found ourselves at Fricks Spettkaksbageri, a beautiful hidden gem in Billinge, about an hour north-west of Malmo. Tucked between residential buildings, this cottage has a winding garden just behind it, with tables and gazeboes dotted all throughout the paths. 

Sitting amongst the roses, we had a fika break of coffee, homemade mazarin cake, and of course we had to try the spettkak. I’d seen this around over the last couple of years, but only recently learned that it is a Skanian specialty! Made with egg, sugar and potato flour, it’s similar to meringue, but less sweet and a much firmer texture. I’m glad to have sampled it but I think I’ll stick to the other classic Swedish pastries and cakes as my first choice!
